A Menu
By Tamika Whitenack
Welcome to Tamika's College Dining Experience! On the menu this week:
Tuesday: Black Bean Tacos
-Our slow-cook in mini rice cooker technique creates black beans that are soft and full of flavor. The aromatics of cilantro, garlic, and onion will delight both your taste buds and linger in your dorm room, creating a garlicky ambience in which to enjoy your meal
-Tortillas are served warm and softened from the steam of black-beans cooking, producing a unique black-bean infused texture
-served with a side of roasted cauliflower on a bed of baby spinach
Wednesday: International Vegan Desserts
Biscotti
-The hazelnut cinnamon vanilla biscotti will surprise you with their subtle almond extract flavor. The crunch and sweetness of these cookies pairs wonderfully with coffee for a late afternoon treat
-Drizzled with dark chocolate
Sesame Cookies
-These simple sesame cookies have a strong tahini flavor and a crumbly melt-in-your-mouth texture thanks to our careful combination of almond flour and maple syrup.
-The sesame seed coating provides a lovely crunch and toasty flavor to these bite-size snack cookies
Thursday: Carrot Cake
-For vegans, the carrot cake base is deliciously moist and flavorful, a result of vanilla-soy-flax-eggs and a healthy dose of carrots. Our special three oil blend of coconut, olive, and canola oils and the addition of purple and golden raisins makes this cake truly special
-For those willing to indulge in dairy, the honey-orange cream cheese frosting adds a light and bright addition to the carrot cake. The frosting is airy, due to our special "beat excessively with an electric hand mixer on the flour of the dorm room" technique

Friday: Cheese Crackers
-These small cheddar-chipotle crackers are little bites of fun! Buttery and rich, these crackers are decadent but not overly indulgent, thanks to the addition of whole-wheat flour. Baked for precisely 10 minutes + the time it takes the chef to go to the bathroom, these crackers are the perfect amount of crispy and tender

If you would like to join our dining experience, please make reservations with the hostess at least 24 hours in advance. Please specify if you would like vegan options and if you would prefer an in-dorm-room dining experience or a take-out meal.
